I found them on Allrecipes.com but changed them a 'wee bit'. This is a salad that I'll take to the next potluck. (Asparagus recipe in next post) This recipe called for bacon, I used Morningstar soy bacon. You could also fry Provalone cheese to get that crunch you need for this salad or just leave this out of the salad. See note at bottom.* Jane ALMOND MANDARIN SALAD prep time 20 mins serves 8 1/2 package Morningstar bacon (this is approx.) 2 T. white wine vinegar 3 T. honey 1/2 tsp. celery salt 1/2 tsp. ground paprika 1/4 cup olive oil 1/2 tsp. dry hot mustard (didn't know what this was so I used dry mustard and added 2-3 sm. dashes of hot sauce. The hot sauce does not make this hot) 1 package garden greens, including red leaf lettuce and I added baby spinach to the mixture 1 11oz can mandarin oranges, drained 1 bunch green onion, diced 3/4 cup toasted slivered almonds I added a handful of dried cranberries and dried blueberry mixture 1. Cook soy bacon or fry provalone cheese. Note* Place provalone cheese in a dry nonstick pan, heat on med heat. Turn over when one side is golden brown and fry the other side. Cool and break into pieces. I often use this as replacement for bacon. 2. To make dressing, thorougly blend the vinegar, honey, dry mustard, hot sauce, celery salt, paprika and olive oil. (I let this set in the refrig for 45 mins) 3. Place lettuce/spinach, oranges, green onions, " bacon " , dried cranberries and almonds in serving bowl.
