Beanburger Melt

 

1 cup canned kidney beans, rinsed and drained

2 tablespoons of minced onion

1 tablespoon minced red or green bell pepper

1 tablespoon ketchup

1 teaspoon Dijon mustard

2 English muffins

4 teaspoons of shredded cheddar cheese

 

In a medium bowl mash beans coarsely. Add onion, bell

pepper, ketchup and mustard, and blend well.

Split each English muffin in half and toast in

toaster.

Preheat broil. Spread one fourth of bean mixture over

each muffin half. Set 4 to 6 inches from heat and

broil for 3 monutes, or until beans are hot and

bubbly,

Sprinkle cheese over muffins and return to broiler 1

or 2 minutes, until cheese melts. serve hot.
