When I first suggest the idea of eating a vegetarian diet to my friends, I let them try this recipe for Eggless Tofu Salad. If you don't tell them it is made with tofu, they'll never suspect otherwise. The 1/2 tsp. of ground turmeric seems to give it the perfect shade of yellow. I make it up in a double batch because it goes fast. It tastes best if the flavors develope for a few hours before eating. Eggless Egg Salad 1 lb Firm tofu well drained and crumbled 1 tbs. Minced onion 2 tbs. Minced celery 2 tbs. Soy mayonnaise 1 tbs. Sweet pickle relish 1 tsp. cider vinager 1 tsp. Prepared mustard 1 tsp. Raw sugar ½ tsp. Ground turmeric ¼ tsp. Dried dill weed 1 tbs. Dried parsley Sea Salt & pepper to taste Directions: In a small bowl, combine mayonnaise, pickle relish, vinegar, mustard, sugar and spices. Mix well and reserve. Place drained and crumbled tofu in a large bowl, stir in onion and celery. Mix in reserved mixture. Season to taste with salt and pepper.
