Guest guest Posted February 10, 2006 Report Share Posted February 10, 2006 Watermelon margaritas...in Emeril's book they are daiqueris, but I much prefer tequila. 4 cups seeded, chopped watermelon (pink/red part only) 3/4 c chopped pineapple 2 c good tequila (or rum for daiqueris) 1 cup sugar syrup* 1/2 c lemon juice 4 c ice cubes 1. freeze watermelon and pineapple, place tequila in freezer for about 4 hours also. 2. combine about half the watermelon, about half the pineapple, 1 cup tequilla, 1/2 c syrup, and 1/4 c lemon juice in blender until well blended. Add 2 cups ice and blend until smooth. Repeat with remaining ingredients for another batch! * Suagar Syrup-Combine 5 cups sugar and 2 1/2 cups water in saucepan over low heat Simmer 10 min. You can use whatever type sugar syrup you might use in sweet tea (um if you make sweet tea) or William Sonoma has bottled sugar syrup that can eliminate this step!
