I got this recipe from a vegetarian slimming magazine that came out here in the 80s. As you might imagine the magazine didn't last long (not a large enough readership, perhaps it was a bit before its time) but this recipe has been a firm favourite of mine ever since. The first time I made it was back in the days before I had a blender and I had to put it through a sieve instead. Thick Tomato and Rosemary Soup 1 medium onion, finely chopped 1 lb tomatoes, skinned and finely chopped 12 oz potatoes, peeled and diced 1 pt vegetable stock 3 sprigs fresh rosemary Grated rind and juice of half a lemon Salt Black Pepper Put all the ingredients in a large saucepan, bring to the boil, cover and simmer for 30 minutes.
