I start making the sauce at noon, cook it till 6pm.

then I turn off the heat and let it sit overnight. I

use glass jars - actually I save all my storebought

sauce jars and use those... clean them really well

first - if you can use a dishwasher... make sure to

leave about an inch of space between the sauce and the

top. Then Freeze them. Someone told me there is a way

to boil the jars to make them air tight, but I haven't

learnt that yet.
