Guest guest Posted February 8, 2006 Report Share Posted February 8, 2006 Made this today and it is attractive and tasty Cucumber Salad W/Spicy Dressing -Liang-pan-huang-kua Vegan/Vegetarian 2 medium cucumbers peeled, sliced length wise, seeds removed and then sliced med.thin. 1 small can water chestnuts 1 small can bamboo shoots 3 green onion bulbs and tender green stems- chopped 1 tablespoon Tamari soy sauce 2 tablespoons vinegar(I used organic apple cider) 2 tablespoons brown or regular sugar(I used organic cane) 2 tablespoons Sesame seed oil 1/4 teaspoon Tabasco 1/2 teaspoon salt In small glass bowl combine soy sauce, vinegar, sugar, sesame seed oil, tabasco and salt. Stir and set aside until sugar disolves In medium size glass bowl, combine sliced cucumbers , drained water chestnuts,drained bamboo shoots and chopped green onions. Add dressing, cover and refrigerate for apx.1 hr. or more until veggies absorb the flavor of the dressing. Note: The original recipe does not call for water chestnuts, bamboo shoots or green onions.
