4th cookie recipe from Bron - Tagalongs (like the Girl Scout cookies by the same name!)

Only they're called here, " Scout's Honor PB Sandwiches " ...but they are the

mirror image of the pricey Tagalongs (shucks, I remember selling GS cookies

for 50 cents a box!!!), believe me.

 

" Tagalongs "

 

Preheat oven to 350. Line 2 cooky sheets with parchment.

 

DOUGH:

 

1/3 c. unsalted butter

2/3 c. creamy peanut butter

1/3 c. granulated sugar

2/3 c. brown sugar

1/2 t. baking soda

1/4 t. baking powder

1/2 t. salt

1 t. vanilla extract

1 large egg, room temp

3/4 c. unbleached ap flour ( " ap " = all purpose)

1 c. rolled oats

 

FILLING:

1 c. creamy peanut butter (I substitute cashew butter, now for

peanutbutter, so dh can enjoy these & other PB treats)

1 T. honey

1/4 c. powdered sugar

 

For Dough:

In a large bowl, cream together the butter, peanut or cashew butter, sugars,

baking soda, baking powder, salt and vanilla. Add the egg, beating until

light and fluffy. Stir in the flour and oats. Drop the dough by heaping

teaspoonfuls onto parchment covered cooky sheet. Use bottom of a glass,

lightly greased, to press each cookie to about 1/4 inch thick.

 

Bake the cookies for 8 minutes, or until they're a very light golden brown.

Remove from oven and transfer to rack to cool.

 

For Filling:

In a small bowl, cream together the peanut butter, honey and powdered sugar

until smooth.

 

To Assemble Cookies:

When cookies are cool, spread half of them with the filling. Top the filling

with the remaining cookies, pressing together gently.

 

YIELD: 32 sandwich cookies
