11th cookie recipe from Bron -- Jam Dots

I have built my baking reputation at our new church SOLELY on this little

jewel right 'cheer!

Try it and you'll see why. :>)

Jam Dots

 

2/3 c. powdered sugar

2 sticks unsalted butter

1/2 t. salt

2 c. unbleached ap flour

1/2 c. jam or preserves (NOT jelly, it won't hold up)--my favorites are

cherry, strawberry, raspberry, pineapple or Damson plum

one coke bottle cap, for a 2 liter bottle of coke, washed and dried

 

Preheat oven to 375. Line two cooky sheets with parchment.

In a medium sized bowl, cream together the sugar, butter, and salt. Beat in

the flour. Roll the dough into about 2-inch balls and place them on prepared

cooky sheets. Flatten cookies very slightly with a glass dipped in powdered

sugar.

Bake cookies for 13-15 minutes, until they're golden brown around the edges.

Remove them from the oven and *immediately* use the coke bottle cap to make

a round indentation in the center of each cooky. Allow cookies to cool

completely on baking sheet. Warm jam of choice in microwave for about 30

seconds so that it will drop off spoon easily. Drop about 1/2 t. jam into

the center of each cookie. You may have to help it spread to cover the whole

circle. Let cookies set until the jam shimmers like jewels, and your finger

doesn't stick to the jam and pull the whole cookie up with it when you lift

your finger. Store between layers of waxed paper in tightly covered cookie

cans.

YIELD: somewhere around 6 dozen

Note: I made these at Christmas, coloring the dough with green sugar, and

using raspberry jam as the filling. They were stunning, if I do say so

myself, looking like teeninsy holly wreaths. I received an order for

someone's wedding in April to make these because of the ones I made for a

Christmas party!
