Guest guest
These are again, easy and very, very tasty. Simple to wow people with. :>) Bron Rocky Road Bars 1 c. (2 sticks) unsalted butter, room temp 1/2 c. brown sugar 1/2 c. granulated sugar 2 t. baking powder 1/2 t. salt 2 t. vanilla extract 2 large eggs 1 2/3 c. unbleached ap flour 1/3 c. Dutch process cocoa powder 3 c. chocolate chips (and again, I use milk chocolate chips but you can use whatever you like) 1 c. roasted salted whole almonds, chopped; roasted salted cashews, chopped; plain pecans or walnuts, chopped--whichever you like and your pocketbook can afford! 1 c. miniature marshmallows Preheat oven to 350. Lightly grease a 9x13 inch pan. Cream together the butter, sugars, baking powder, salt and vanilla. Beat in the eggs. Stir in the flour, cocoa, 2 c. of the chocolate chips, and the nuts of your choice. Pat the dough into the prepared pan. Bake the bars for 15 minutes, until they're set around the edge but still soft in the center. Sprinkle with the remaining 1 c. chocolate chips and the marshmallows, and bake until they soften, about 3 minutes more. Remove pan from oven and cool completely before cutting into bars. YIELD: 24 bars
