Guest guest
I just prefer to call these " Nut Butter Smoothies " since I use anything BUT peanutbutter in them now. :>) 6 T. (3/4 stick) unsalted butter 1/2 c. nut butter 1 c. granulated sugar 1/4 c. brown sugar 2 large eggs 1 t. vanilla extract 1 c. unbleached ap flour 1/4 t. salt 1 t. baking powder 1 c. chocolate or peanutbutter chips, or lightly salted nuts to go with choice of nut butter, optional Preheat oven to 350. Lightly grease a 9x9 pan. (Note: I have used a 9 in. round cakepan with great success in this recipe--Bron) In a medium bowl, cream butter and nut butter together until smooth. Add the sugars, beating to combine. Beat in the eggs one at a time, scraping the inside of the bowl after the first egg. Stir in the vanilla. In a separate bowl, whisk together the flour, salt and baking powder and add to the nut butter mixture, stirring until combined. Mix in the chips. Spread batter in prepared pan. Bake bars for 30 minutes until edges just barely come away from sides of pan. Remove from oven and cool completely before cutting. YIELD: 16 bars
