(1 stick) unsalted butter 2 c. brown sugar 2 large eggs 1 t. vanilla extract Scant 1/2 t. butter-rum or butter-pecan flavor (optional); rum flavor will also work 1 t. salt 1 t. baking powder 1 1/2 c. unbleached ap flour 1 1/2 c. chopped walnuts Preheat oven to 350. Lightly grease a 9x13 pan. Melt butter in a saucepan set over low heat, or in a bowl in the microwave. Remove from the heat and add the sugar, mixing until well-blended. Cool to lukewarm. Transfer the butter mixture to a medium-sized mixing bowl. Stir in the eggs, then the vanilla, flavoring, salt and baking powder. Mix in the flour and nuts. Spread the batter into the prepared pan. Bake the bars for 20-24 minutes, until the top looks shiny. Don't overbake, or they'll dry out; bake just until the edges start to pull away from the sides of the pan, and a toothpick comes out almost clean, with just a few moist crumbs clinging to it.
