I could eat this every single day!

 

Roasted Caramelized Butternut Squash

 

2 med. or 1 large butternut squash

6 tablespoons butter or margarine melted

1/4 cup light brown sugar

1 1/4 teaspoons salt

1/2 teaspoon black pepper

 

Preheat oven to 400F.

Cut ends off squash and cut squash in half lengthwise

discard seeds.

Peel squash and cut into 2-inch cubes,cover baking

sheet with foil for easy clean up and spray with cooking oil, place

cubes on baking sheet.

Mix the butter, salt, pepper, and brown sugar together.

Coat the cubes with mixture. Roast for 55 minutes. During the roasting turn

squash a few times until it begins to caramelize and browns evenly, adjust

seasonings and serve hot.
