Very tasty and should be Vegan friendly Oatmeal Peanutbutter Cookies Pre heat oven to 350 degrees 1 cup old fashioned oats 3 tablespoons olive oil 1 cup fruit juice (apple,white grape, peach, etc.) 1 cup peanut butter(creamy or chunky) 1/2 cup raisins(optional) 1/2 cup chopped nuts(optional) 2/3 cups brown sugar 1 teaspoon pumpkin pie spice 1 cup flour pinch of salt 1/2 teaspoon baking soda Mix oats with olive oil and fruit juice and let stand for apx.15 min.until oats absorb moisture. Add peanut butter, raisins and nuts. Blend dry ingredients(*sugar, spices, flour,salt and soda) Mix all ingredients together. form into med size cookies and bake at 350 degrees in pre-heated oven for 10-15 minutes until lightly browned around the edges . Yield apx.1 and !/2 doz. med. size cookies. I baked the cookies on my new clay slate and it needed no oil spray, etc. * I like to add the brown sugar to the dry mixture but it can also be added to the oat mixture.
