my first squash

Worked out great

 

bought an acorn squash, baked it in water

 

fried onions, peppers, zuchini, garlic

 

scooped out the squash, mixed it with the fried stuff,

cooked brown rice, chic peas and smoked cheddar...

baked it some more and ate it

 

it was very good - but I probably should have used it

as a side dish - I'll bake some tofu on the side next

time

Congrats, Mike!! lots of fuber and beta carotene in there... :-) If

you used enough chickpeas - it's a meal, with a little side salad and

a whole grain roll...
