Mexican Vegetable Soup 8 cups od veg. broth 1 15oz. can pinto beans or white northern beans 1 cup frozen corn 2 stalks celery, chooped 2 carrots, peeled and sliced 1 teaspoon cumin pinch or dried oregano 1 Tbl. dried cilantro or 3 Tbls. fresh chopped 3 garlic cloves, smashed 4 green onions, chopped, the whole onion 1/2 jalapeno pepper minced (more if you want) garnish top with tortilla chips and grated soy or regular cheddar cheese In a small amount of oil saute garlic, onion, carrots and celery until tender-firm. Add broth and the rest of the ingredients. bring to a boil and simmer for 10 minutes. Adjust seasonings, add salt & pepper if needed. Serve in bowls, top with broken tortilla chips and grated cheese.
