Guest guest Posted February 3, 2006 Report Share Posted February 3, 2006 I have a few banana bread recipes but this is one of the easiest no fuss recipe and it makes a mega loaf. Banana Bread with Chocolate Chips 2 cups flour 1 cup sugar (I use the raw organic) 2 large eggs 1/2 cup vegetatble shortening 1 tsp. vanilla 1 tsp. salt 1 tsp. baking powder 1/2 tsp. baking soda 1 cup mashed bananas (3 small or 2 medium usually) 1 cup chocolate morsels Preheat the oven to 350 degrees and lightly grease and flour a 9X5-inch loaf pan. In a small bowl blend the dry ingredients: flour, baking powder, baking soda and salt, set aside. Mix sugar, eggs, shortening and vanilla together until creamy, add bananas and blend well. Blend dry ingredients into the banana mixture until combined. Stir in chocolate morsels. Pour batter into prepared loaf pan and bake for 55 to 60 minutes or until toothpick inserted comes out clean. Cool 10 mins and remove from pan and finish cooling on wire rack.
