I'm sure the vegan mayo and cheese would work for the vegans within our group. Vegetarian Vegetable Casserole 1 (10 to 12 oz) box frozen French style green beans, thawed 1 (10 to 12 oz) box frozen corn, thawed handful of frozen peas thawed 1/2 cup mayo of your choice 1/2 cup sharp cheddar cheese grated 1 1/2 cups green & red bell peppers, chopped 1/2 cup celery chopped 1/2 cup onion chopped pinch of salt, pepper and crushed hot pepper flakes Topping ---------- 1 cup breadcrumbs 2 tablespoons melted butter or margarine heaping tsp. of dried herbs of choice Preheat oven to 350F. and grease a 2 quart casserole. Pat defrosted vegetables between paper towels. Mix all ingredients together and place in prepared casserole dish. Mix breadcrumbs, herbs and melted butter and place over top of casserole and bake for 25 to 30. This is perfect for a potluck too or to take to a friends house.
