Guest guest Posted January 31, 2006 Report Share Posted January 31, 2006 A covered baking dish in the middle of the oven at a temp. of 350 degrees or lower and rub a bit of olive oil(safest at high temps) on your veggies and they will roast nicely. I roasted Yams this morning in uncovered glass baking dishes and in 30 minutes they were done..Outside skin was dry but I was not going to use it. If you use foil(I don't) wrap the veggies in foil and place them on the rack. My roasted Spanish onion was in the oven at 350 degrees for well over an hour and never scorched.
