Give me a clue as to what you are doing?

Oil on veggies, what type pan, how hot is the oven, hot long are you

roasting them?

Thanks for the help! Okay, I usually use a baking (cookie) sheet and

olive oil. The main thing I want to get right is potatoes and

carrots. I have one recipe that says 425 degrees for 20 - 30 minutes

for oven fries - when I try this they are always crunchy and I

usually have to leave them in for at least an hour. By then, they

are no longer crunchy but dry, mealy or burned. Another recipe says

roast ALL veggies at 500 degrees, potatoes for 24 minutes, carrots

for 20.

I peel my potatoes and cut in half and the carrots I cut in half width

and then lengthways. I oil them and bake in a long glass baking dish

covered with for 40 minutes on about 425F. I remove the foil and bake

10 more minutes to brown them.
