Guest guest Posted January 31, 2006 Report Share Posted January 31, 2006 Greek Tomato and Caper Salad 5 large ripe tomatoes 1 sm. red onion, cut in half and then thin slices 1 or 2 mild canned Ortega chiles chopped 20 kalamata olives (20 black will do also) coarsely chopped 3 1/2 ounces feta cheese crumbled 4 tablespoons olive oil 1 tablespoon vinegar dash of dried oregano 1 tablespoon capers, drained salt and pepper to taste Cut tomatoes in half and then into slices. Arrange tomato and onion slices on a large round plate, sprinkle chiles, olives, feta and capers over top of tomatoes and onions. Mix oil with vinegar, oregano, salt and pepper.
