Guest guest Posted January 31, 2006 Report Share Posted January 31, 2006 Samurai Salad 8 (oz) firm tofu, water pressed out and quartered 4 cups of cut mixed greens 2 teaspoons olive oil Garlic salt 1/4 cup diagonally sliced green onions 1 small tomato, sliced 1/2 teaspoon toasted sesame seeds Ginger Dressing (recipe below) Lightly brush tofu with oil and Ginger Dressing; sprinkle with garlic salt. On a well-oiled skillet, cook tofu until golden brown on both sides. Toss greens with Ginger Dressing; portion onto two individual serving plates. Place tofu slices on bed of lettuce; sprinkle with green onions, and garnish with tomato slices. Sprinkle with sesame seeds, if desired. Makes 2 main dish servings. Ginger Dressing: Combine 1/4 cup each lite low sodium soy sauce and white wine vinegar, 2 teaspoons grated fresh ginger root and 1/2 teaspoon bottled hot pepper seasoning; mix well. Makes 1/2 cup.
