Broccoli Puree Recipe

Lily,

The one in the book looked so good but the recipe called for heavy

cream, grated parmesan cheese and paprika..So I changed it to a more

friendly Vegetarian/Vegan recipe.

The book recipe also called for the broccoli to be cooked in water but

that didn't make sense to me when I could cook it in vegetable stock

for extra flavor, and use the remaining stock when I pureed the

broccoli.

The Spanish Onion is baking in the oven now and I will have it as a

side dish with the Broccoli Puree on mashed potatoes for dinner.

PS my eyes are burning from the onion but it sure has a wonderful aroma.
