I'll add more celery next time, also It only made 3 bowls, so I'm gonna doubel the recipe next time as well, any ideas for extra spices to add? mike Cream of Celery Soup 1 1/2 cups celery, chopped 1/2 cup onion chopped 3 cups milk 1 cup water 3 tablespoons white flour salt & pepper to taste 2 tablespoons of butter or margarine (melted) Boil the cup of water and add celery and onion. Simmer for 15 minutes. Add 2 1/2 cups of the milk and stir. Whisk together butter, flour, and the remaining 1/2 cup of the milk and salt & pepper. When blended add to the celery mixture. Bring to almost a boil and simmer a few minutes while stirring until soup thickens. I like to take the potato masher and mash up the celery when the soup is done. Hope you enjoy this recipe as much as I do.
