Guest guest Posted January 30, 2006 Report Share Posted January 30, 2006 This recipe is delicious as a warm sauce over mashed potatoes, Veggie steaks/burgers, pasta , rice, etc., Or cold as a creamy salad dressing. This is my experiment and I am 98 % sure of the recipe amts. LOL Deanna Broccoli Puree 2 heaping cups chopped broccoli florets(fresh or frozen) 2 cups vegetable stock* 2 chopped green (spring) onions white part (bulb) only. reserve green tops for garnish. In a med size sauce pan bring broccoli and vegetable stock to a boil, reduce heat and simmer until tender. Place in blender or food processor, add onion and puree. Serve hot or cold Option: Garnish with thinly sliced green onion tops *I used 1 cube of Organic Gourmet Vegetable Bouillon to 2 cups water to make the Vegetable stock.
