Tomato and Banana Salad 2 ripe but firm enough bananas (not the plantains ones) 1 tablespoon lemon juice 1 lb. firm tomatoes Dressing ----------- 3 tablespoons balsamic vinegar 5 tablespoons sunflower or canola oil 1 teaspoon brown mustard 1/2 teaspoon salt 1/2 teaspoon pepper 3/4 to 1 tablespoon curry powder 1 teaspoon sugar Garnish ------------- 1 bunch flat leaf parsley, chopped Peel bananas and cut into slices and coat with lemon juice. Peel tomatoes, cut in 1/2 and remove seeds then cut into slices and carefully mix with the banana slices. Make dressing in small glass bowl with the balance of ingredients. Toss the dressing with tomatoes and bananas carefully and garnish bowl with parsley and serve now. With a free 1 GB, there's more in store with Mail.
