Guest guest Posted January 27, 2006 Report Share Posted January 27, 2006 So.. tonight I made Stuffed Grilled Portabella mushrooms. 4 Medium Portabellas olive oil 1/2 c minced onion 1/4 c breadcrumbs (sourdough) 2 cups or more small cut Swiss Chard (or spinach) 2 minced garlic cloves 1/4 c diced grape tomatos 1/4 c chopped hearts of palm (pre marinated is easiest) cheese to taste - mozarella/parmasan/asagio In a skillet, combine 1tbl olive oil and onion. Add garlic when the onion starts to turn translucent. Add Swiss Chard, tomato, breadcrumbs, and hearts of palm. Saute all together until the swiss chard looks soft. Meanwhile.. coat the mushroom caps with oil and then grill for about 5 min. Put down a layer of cheese (shredded) on the mushrooms, then 1/4 of the mixture from the skillet on each, then top with a bit more cheese.
