Stated it was a 2nd place prize winner in a meatloaf contest and it fooled the judges. I think it's pretty darn good. Makes a quality sandwich the next day also. TVP Meatloaf 8 oz. TVP 1/4 cup egg substitute 1/2 onion, chopped 1/4 cup carrot, shredded 1 tbl. garlic, minced 1 cup cooked brown rice 8 oz. spicy salsa 2 cups boiling water Preheat oven to 350 degrees Mix TVP with 2 cups boiling water and allow to hydrate for 5 to10 minutes. Combine TVP with the egg substitute, chopped onion, carrot, garlic and brown rice. Shape into a meatloaf and place on a baking sheet. Bake for 20 minutes. While meatloaf is baking heat the salsa in a small saucepan. Remove meatloaf and top with hot salsa. Slice and serve with your side dishes. *Hint* I spray a loaf pan with cooking spray and place the loaf inside to bake and I bake a little bit longer.
