Usually has bacon in the recipe, it's very good with none. So you can use some

soy Bac-O-Bits or a little liquid smoke for

the flavor if you want.

Krautsuppe (Cabbage Soup)

 

2 onions sliced

1 turnip sliced

2 carrots in slices

1 stalk celery sliced

2 potatoes cubed

1 head green cabbage shredded

4 cups vegetable broth

2 cups water

salt and pepper to taste

6 sprigs of parsley

1 bay leaf

 

Tie the parsley and bay leaf with a thread and put

everything into a soup pot. Bring to a boil and simmer partially

covered, for 1 1/2 hours. Pull out the parsley/bay leaf bundle and serve the

soup. Garnish with a wedge of cheese if you like.
