GAYLE'S 4 BEAN CHILI 1/2 cup Kidney beans (dried) 1/2 cup Pinto beans (dried) 1/2 cup Great northern beans (dried) 1/2 cup black beans ( dried) 1 onion diced 1/2 green pepper diced 2 cloves garlic chopped 1 TBS chili powder 1/2 TBS cumin powder red pepper flakes to taste 1 14.5 oz can diced tomatoes in juice (reserve juice) 1 vegetarian bouillon cube ( or equivalent of stock) 1/2 TBS flour 1 cup corn Cook beans When beans are ready saute the onion in the oil until soft. Add green pepper cook for 1 to 2 minutes. Add chopped garlic, chili and cumin powders and red pepper flakes. Mix to make sure seasonings are combined with onions and peppers. Sprinkle with flour stir for 1 to 2 minutes. Mix bouillon cube water and add to reserve tomato juice to equal 2 cups of liquid. Add tomatoes, cooked beans, reserve juice with bouillon and corn to onion mixture. Stir to combine. simmer for about 15 minutes and serve.
