Portia Sauteed Spaghetti Squash 1 to 2 lb. spaghetti squash 2 tablespoons olive or canola oil 1/2 cup chopped green onion, tops too 2 garlic cloves, minced 1/2 cup chopped cilantro, spinach or parsley 1 tablespoon lemon or lime juice 1/4 cup grated Parmesan (freshly grated is best) Preheat oven to 350F. Take squash and pierce deep holes in several areas. Bake on a cookie sheet for 1 1/4 hrs. or until tender when poked. Cut squash in half lenghthwise and remove seeds. With a fork, scoop out the flesh and place in a medium bowl, separate the squash into strands of spaghetti. In a large skillet heat oil over medium-high heat. Cook green onions and garlic for 3 minutes stirring constantly. Add squash and stir fry for 3 to 5 minutes until blended and heated through. Stir in cilantro or spinach or parsley and mix as green veg. wilts. Stir in lemon or lime juice. Toss with the Parmesan and serve. With a free 1 GB, there's more in store with Mail.
