I've tried substitutes before with no success but I'm about to give them another go. I have bought soya, rice, oat, almond and chufa (I think this is what we used to call tiger nuts when I was a child - little brown roots with a white milky flesh). You'll see I don't do things by halves, LOL - I thought if I bought small cartons of each, then I could compare and contrast. Which, if any, of the substitutes do you use? Are some of them better for some purposes than others - e.g for cooking, baking, drinking or taking in tea etc? Do they freeze ok? I have yet to try rice milk, but given that I like sake, I can't imagine it would be that bad. Rice milk tastes nothing like sake........LOL I like rice milk the best since it's not thick and it doesn't remind me of whole milk. I have never frozen them but the ice cream I eat it Rice Dream and it's made from rice milk.
