Guest guest Posted January 26, 2006 Report Share Posted January 26, 2006 These taste better than hushpuppies and if you add the Old Bay Seasoning or the Chesapeake Seasoning mix from our files (by the way I can't be without this mix and I thank the member who posted it, Marsha?) they taste like a fish fry. Faux Fish Squash Fry 1 cup yellow squash cooked and mashed(pour off excess water) 1 egg, beaten 1/3 cup all purpose flour 1/3 cup cornmeal 1 teaspoon baking powder 1/2 teaspoon salt 1 onion, grated 1/2 teaspoon Chesapeake or Old Bay Seasoning (optional) canola oil for frying Combine squash and egg and stir well. In a separate bowl, combine the flour, cornmeal, baking powder, salt and seasoning and stir well. Combine the flour mixture with the squash mixture and stir to mix well. Heat oil in a heavy skillet and drop squash mixture by level tablespoonfuls into hot oil. Cook until golden brown, turning once. Drain on paper towels.
