Faux Fish Squash Fry recipe

These taste better than hushpuppies and if you add the Old Bay Seasoning or the

Chesapeake Seasoning mix from our files (by the way I can't be without this mix

and I thank the member who posted it, Marsha?)

they taste like a fish fry.

 

Faux Fish Squash Fry

 

1 cup yellow squash cooked and mashed(pour off excess water)

1 egg, beaten

1/3 cup all purpose flour

1/3 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1 onion, grated

1/2 teaspoon Chesapeake or Old Bay Seasoning (optional)

canola oil for frying

 

Combine squash and egg and stir well.

In a separate bowl, combine the flour, cornmeal, baking powder, salt and

seasoning and stir well.

Combine the flour mixture with the squash mixture and stir to mix well.

Heat oil in a heavy skillet and drop squash mixture by level tablespoonfuls

into hot oil. Cook until golden brown, turning once.

Drain on paper towels.

Now that sounds interesting... I do have a weakness for hush puppies...
