I make this quite often since I have a friend bringing me homegrown organic zucchini in abundance. Chelsea Italian Stuffed Zucchini 2 large zucchini 1 cup spaghetti sauce of your choice - I like the chunky style 4 tablespoons Italian-style dried bread crumbs 1/2 cup shredded mozzarella cheese or another type 4 tablespoons grated Parmesan cheese 2/3 cup frozen burger-style crumbles or use reconstituted TVP Preheat oven to 350 degrees F Slice each zucchini in half lengthwise. Hollow out the zucchini. Place the scraped out zucchini into a medium bowl. Combine zucchini, bread crumbs, Parmesan cheese, TVP and pasta sauce. Mix well. Place mixture into hollowed out zucchini. Arrange zucchini in a baking dish, sprinkle with mozzarella cheese; bake for 35 to 40 minutes. With a free 1 GB, there's more in store with Mail.
