creamy polenta and saute greens

This recipes was inspired by a dish served at The Raven, an upscale vegan

restaurant in Mendicino.

 

I've never been able to get my husband to eat any cooked greens but when he

order this at the restaurant he really liked it.

 

It looks decorative, tastes great, and can be cooked in 1 pan in under 30

minutes.

 

polenta (organic Trader Joes comes in a tube like cookies)

tomato sauce (Muir Glenn roasted garlic)

1 bunch of greens (I've fallen if love with Swiss Chard)

1 onion

2 cloves minced garlic

olive oil

 

Heat a large oiled fry pan. Then add onions and cook at medium heat for 5 min

or until golden. Add garlic and cook another minute. Next add greens (cleaned

and cut into bite size pieces) and cook for three to five minutes more until

greens are cooked to taste.

 

Cut polenta into 1 to 2 inch slices. Transfer greens out of the pan. Saute

polenta in heated fry pan until it is heated through and golden on both sides.

 

To put it together:

In a plate or bowl add about 1/4 to 1/2 cup tomato sauce and microwave on high

for 1 minute. Make a polenta sandwich by adding a piece of polenta to the plate

then greens and topping with a final piece of polenta. I added a pinch of

parmersan cheese to finish it off.

 

It goes well with steamed brocolli.
