Beans and Greens

 

 

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, pressed

1 (15-oz.) can white beans, rinsed and drained

1 bunch Swiss chard, kale, or other hearty green, rinsed, chopped

Salt and pepper to taste

1 cup broth

 

In a large skillet, heat olive oil. Add the onion and garlic and cook for 3

minutes or so, until soft. Add the greens and stir. Now add the beans, stirring

in, salt and peppering to taste.

 

Add the broth, cover and simmer till tender, about 10 to 15 minutes.
