Guest guest Posted March 3, 2010 Report Share Posted March 3, 2010 COCONUT DATE ROLLS 2 cups pitted dates 1 cup unsweetened shredded coconut 1 cup chopped almonds In blender or food processor, pulse dates 20 times. Transfer dates to bowl and stir in coconut. Spoon out 2 tbs mixture at a time and form into balls. Pour nuts on plate, roll balls in nuts to coat. Serve cold or at room temp.
