Guest guest Posted January 20, 2010 Report Share Posted January 20, 2010 Sour Cream and Roasted Garlic Mashed Potatoes 2 pounds red potatoes, quartered 1 cup (8 ounces) sour cream 2 tablespoons minced fresh parsley 1 teaspoon salt Few cloves of roasted garlic 1/2 teaspoon pepper Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 min- utes or until tender. Drain and transfer to a large mixing bowl. Add the remaining ingredients; beat until blended.
