pesto & tomato slice

I used some ready made puff pastry and spread some pesto on it leaving a half

inch gap to the edges. I covered the pesto with a mix of sautéed onions and

mushrooms & then grated a bit of cheese on top. This was then covered with

sliced tomatoes. It baked at 200 degrees for about 45 mins and was lovely!!!

 

Good served with steamed green beans.....Enjoy
