Pheobe,

Congrats on your diet change. You are making the right choice. Try a book

called " The Gradual Vegetarian " . I've forgotten the author, but it is a great

little book...full of common-sense advice, encouragement, and simple recipes.

Some of the specific nutrition advice is a bit dated, but the general tone is

nice. I especially liked the chapter about living (and cooking for)

omnivores.

Vegetarian lasagne (with spinach and mushrooms and tofu to replace part

of the Ricotta) is a good recipe; so are vegetarian chilis and stews. I

just made a chowder with canned tuna. Also many casseroles and pasta

dishes you can easily omit the meat, especially if cheese and eggs are

included. Quiches and fritatas are another.

Welcome, Connie! Sorry to hear about your kitty, none of them live long

enough. :( Lots of us are animal lovers here -- especially cat lovers, it

seems! I have three cats and one dog, a chihuahua mix.

I'm interested in your meatloaf recipe, if you wouldn't mind posting it --

and I'm sure I'm not the only one. :)

Hello everyone,

 

I just joined the group and am a bran new vegetarian. 2 months as of yesterday.

 

Anyhow, here I am at 45 years old learning how to cook a balanced meal all over

again and using ingredients I've never heard of before.

 

I look forward to learning some new and EASY recipes!

Yeah, I relate to that. But it is fun. Don't neglect to try nutritional

yeast. It's delicious sprinkled on pasta, soups, stews...I even sprinkle

it on my bread. It has a wonderful cheesy flavor.

 

TVP is another handy product: a meat replacement made of soy, it is sold

in granular or chunk varieties and may be flavored or unflavored. With

TVP, you can adapt almost any recipe calling for ground or cubed meats.

It a very healthy product: low calorie, low-fat, high protein.

 

Next, I have become a huge fan of almost every kind of bean, especially

lentils. I use them in everything! All my soups and stews contain beans.

Even my potato soup is enhanced by throwing in a handful of red lentils.

Learning to cook without meat also led me to finally trying to make a

good miso soup at home. That was a triumph for me. It's one way I enjoy

tofu.

 

I've learned so much about alternative ingredients from reading this

group! It's an invaluable resource for those transitioning to

vegetarianism. Instead of feeling deprived, I feel like I'm adventuring.

How much fun it is to discover an entire new way of cooking and eating

after age 60.

 

I recommend this list to anyone who seems interested in vegetarianism.

Thanks Mary. I'm really having fun. We have tried several of the fake

meats and both Hubby and I have been impressed.

 

The Farmers Market has become my best friend and I'm trying to buy as much

organic as I can.

 

I don't miss meat at all. Switched between lunch and dinner one time on a

whim and that has been it.
