Thanks, Judy Saturday, October 10, 2009 10:17 PM Cornbread Muffins Cornbread Muffins 1 c. cornmeal - I like yellow 1. c. flour - all purpose or whole wheat 1/4 c. sugar or maple syrup(optional) 1 T. baking powder 1 t. salt 1 egg or 1 T. egg replacer 1/3 c. oil 1 c. milk, soy or dairy Combine dry ingredients in a bowl; mix well. Combine the liquid ingredients. Stir the wet and dry mixture together until just blended. . Pour into a well oiled cast iron skillet or 8 inch square dish.
