Guest guest Posted September 28, 2009 Report Share Posted September 28, 2009 I am new to this group and am looking forward to adding some new recipes to my favorites. I have one that I want to share. It has cheese in it so if you don't eat cheese, you could leave it out. Summer Squash Tart 2 T olive oil 1 zucchini 1 yellow squash 1 med. onion sliced 1 red bell pepper sliced (or green or yellow pepper, but red is sweetest) 1/2 tsp dried oregano or thyme 1 clove garlic chopped black pepper 1 refrigerated pie crust(from a box of 2) 1/2 C feta cheese plus a little more to put on top 1 plumb tomato sliced and seeds removed Heat the oil in a large skillet. Saute the onion, bell pepper, garlic, zucchini and squash until onions are golden but not brown, about 10 minutes. Remove from the heat and add oregano or thyme and pepper to taste. Cool to room temp. Heat the oven to 400 F. Line a baking sheet with parchment paper. Unroll the pie crust onto the paper. Sprinkle the feta cheese in the center of the pie crust within 2 inches of the edge. Pile the veggie mixture on top of the feta. Fold and pleat the edges of the crust over the edges of the filling, leaving the center uncovered. Bake for 35 to 40 minutes until crust is golden brown. Some of the frozen ones do not contain lard. The Betty Crocker pie crust mix in a box is lard-free, but Jiffy's pie crust mix does contain lard. I have a good pie crust recipe I'll try to remember to post this evening (when I'm not supposed to be getting ready for work!)
