Guest guest Posted September 14, 2009 Report Share Posted September 14, 2009 Peanut Crackers 2 sticks butter (1 cup) 1 cup sugar 1 1/2 cups roasted peanuts (chopped) 1/2 teaspoon vanilla flavoring 40 saltine crackers (can also use graham crackers) Arrange saltine crackers in a single layer on a cookie sheet. Bring to a boil first three ingredients for 3 minutes, stirring often. Add vanilla mixing well. Spoon peanuts in center of each cracker. Pour remaining sauce over each cracker being sure to cover top of each one. Bake in 350 degree oven for 12 minutes. Remove with spatula immediately to a wire rack to cool.
