Guest guest Posted August 17, 2009 Report Share Posted August 17, 2009 Eggplant Pasta sauce or Eggplant Stroganoff 1 Medium Eggplant cut into cubes 1 onion finely diced 1 package of Mushrooms 1 cup vegetable broth Garlic powder ( to taste) Dried Thyme to taste Salt and Pepper Spaghetti noodles or Bow tie past and or Egg noodles ( Depending on how you go with the recipe) Take the eggplant cubes and place in pan. Pour veg broth over cubes and put on the stove on med high. Place lid over pan. Let this cook till tender and very mushy. While that is cooking finely chop the mushrooms and add to onions in a frying pan. Sautee until onions are translucent and the mushrooms are tender. Add Mushrooms and onions to the eggplant mixture. Season with Thyme and garlic. Let this simmer for about 5 minutes to get the flavors mingle. add salt and pepper Now here comes the decision part. Use this sauce by itself over Spaghetti or add one to one and a half cup sour cream to the brown sauce to make Vegetable Stroganoff. Hope you like it and if you have any suggestions to make it better let me know. I just came up with it last week and the stroganoff part today. I used bowtie past for the stroganoff.
