Guest guest Posted August 14, 2009 Report Share Posted August 14, 2009 Easy Eggplant Dish INGREDIENTS (Nutrition) a.. 1 eggplant, diced b.. 1 yellow squash, peeled and diced c.. 1 cup chopped onions d.. 2 garlic cloves, sliced thin e.. 1/2 c. diced green bell pepper f.. salt to taste g.. 1 T. oil h.. 1 cup dry italian bread crumbs i.. 1/2 t. cayenne pepper j.. 1 tablespoon butter k.. 1/8 cup canned sliced green chiles l.. 1/3 cup crushed buttery round crackers m.. 1/2 cup shredded mozzarella cheese DIRECTIONS 1.. Preheat oven to 350 degrees F (175 degrees C). 2.. Heat the oil in a large skillet and saute eggplant and squash, onions, bell pepper, and garlic. Cook until tender but still firm, about 10 minutes. Add salt to taste. 3.. In a 2 quart sprayed(non-stick spray) casserole dish combine eggplant, squash, bell pepper, onions, bread crumbs, cayenne pepper, butter and chiles.
