Guest guest Posted August 13, 2009 Report Share Posted August 13, 2009 This is a colorful and flavorful salad. Makes up great for a picnic or nice summer lunch or dinner. Judy Black Bean and Corn Salad 2 15 oz can of Black Beans or one black beans and one Pinto Beans, drained and rinsed 1/3 c. fresh squeezed lemon or lime juice 1/4 c. olive oil 1 garlic clove, minced 1 t. fine sea salt 1/8 t cayenne pepper 2 ears of corn cut off the cob, or 1 1/2 c. frozen corn(thawed) 1 avocado, peeled and stone removed. Dice up the avocado. 1 bell pepper, diced up small - use with red, green or yellow 2 tomatoes, diced up 6 green onions, sliced up, white and green part small handfull of Cilantro, coarsely chopped up. Put the lime juice, olive oil, garlic, salt and cayenne into a large bowl and wisk them together well. Add the remaining ingredients to the bowl and toss gently together and Enjoy!
