Excellent salad. Lots of good refreshing flavors blending well togetherl

Citrus Rice Salad - courtesy of Choice-Quick and Healthy Eating cookbook by

Salad :

2 c. brown rice, cooked

1/4 c. celery, thinly sliced

1/4 c. green onion sliced

1/2 c. mandrin oranges

1/2 c. cucumber. sliced or diced

1/4 c. raisins

1/4 c. pecans or walnuts

 

Dressing:

1 c. nonfat plain yogurt of Tofu Whipped Cream (see recipe below)

2 T. orange Juice

2 T. honey agave syrup or sugar

1/4 t. ginger, ground

 

Cook the brown rice.

In a large bowl, combine all salad items except rice and mix well.Then toss warm

rice with salad ingredients.

 

In a small bowl, combine the dressing ingredients; mix well. Pour the dressing

over the salad; toss gently to coat. Serve a hearty portion of this salad over

a bowl of dark green lettuce leaves as a main dish.

 

 

Tofu Whipped Cream -

1 c. soft tofu

4 T. vegetable oil

2 T. Honey

1/2 t. lemon juice

1/8 t. salt

1 1/2 T. vanilla - use white vanilla for a whiter cream)

 

Blend all the ingredients in a blender until smooth and creamy. Chill and serve

as you would whipped cream
