Guest guest Posted August 2, 2009 Report Share Posted August 2, 2009 Autumn Fruit Salad in Thyme and Ginger 1 oz. ginger in syrup 2 ozs. caster sugar or grind white sugar in coffee grinder 5 ozs. of water 1 large orange 2 granny or other apples 2 slightly underipe pears 4 ozs. white grapes 1 large sprig of fresh thyme Drain the syrup from the ginger and add it to the sugar and water in a pan. Stir and heat gently to make a clear syrup. Peel the orange and slice across the grain into 1/4 " thick rounds, removing any pips. Cut each apple in half horizontally, remove the core and quarter. Cut the pears in half lengthways, remove the core and quarter each half. Remove the grapes from the stalk. If they have seeds cut each in half and deseed. Put the apples and pairs into the syrup and simmer for 5 minutes. Add the stalk of thyme. Add the orange slices and simmer for another 5 mins. Slice the pieces of ginger as thinly as you can and add this to the compote with the grapes. Simmer for 5 minutes more. Pour into a serving dish and allow to cool before eating. Serves 4.
