Guest guest Posted June 3, 2009 Report Share Posted June 3, 2009 Being a very busy college student, I like to concoct balanced recipes with a lot of quick-cooking ingredients. I love Knorr rice and pasta sides, the teriyaki ones and spanish rice are vegetarian, but you should always read the labels just in case! So this filling requires: 1 pkg Knorr (or other brand) Spanish rice 1 can beans (I use black) 1 can diced tomatoes half a bag of frozen corn taco seasoning Just cook the rice according to the directions on the bag and stir the other ingredients in while it is simmering. They just need to cook until the beans have warmed through and the corn is cooked. I generally add 1/3 -1/2 packet of taco seasoning depending on taste, and save the rest for the next time I make it. If you like, you can always add other fresh veggies or soy crumbles. It's also delicious topped with shredded cheese. If you're using it as a filling, scoop a generous amount into the center of a tortilla, top with cheese and sour cream, roll it up and enjoy!
