This recipe is taken from my book 'Vegtarian Indian Homestyle Cooking' Apple Ghevar Ingredients: for 6/30 min 400 g apples 200 g paneer or mawa 100 g sugar 2 tbsp finely chopped pistachio nuts cashew nuts, walnuts 1 tsp lemon juice 10-12 strands saffron 2 glasses water to taste powdered sugar Method: Peel apples and slice them round half an inch thick. Gently remove the core. Add lemon juice to water and put the slices into it so that they do not change colour. Soak saffron in a spoonful water. Make sugar syrup of one string consistency and dip the apple rounds in it. Keep turning them lightly. After about five to seven minutes, when they become tender, drain them. Mash paneer and add powdered sugar to taste. Spread this paneer mixture evenly on the apple rounds. Garnish with chopped nuts and saffron.
